O gênero Salicornia, conhecido popularmente como glasswort ou samphire, é formado por plantas suculentas de caule articulado, muito adaptadas a ambientes salgados, como pântanos salinos. A espécie Salicornia europaea pode tolerar mais de 1000 mM (equivalente a 58,44 g/L) de NaCl, com uma necessidade ideal de sal entre 200 e 400 mM (11,69 a 23,38 g/L). Suas folhas são opostas e unidas na base, geralmente reduzidas a pequenos tubérculos ou escamas. As plantas apresentam flores bissexuais ou unissexuais, organizadas em inflorescências em forma de espiga. Salicornia europaea é uma halófita obrigatória (euhalófita). Sua ampla distribuição em pântanos salgados, áreas costeiras e planícies salinas em todos os continentes destaca seu potencial para a agricultura salina.
