Introdução

O espinafre (Spinacia oleracea L.) é uma hortaliça de folhas verdes, muito cultivada em todo o mundo. Pertence à família Amaranthaceae e é uma das plantas mais importantes na produção global de vegetais, com mais de 26 milhões de toneladas colhidas por ano. É apreciado por crescer rápido, se adaptar bem a diferentes condições e ser muito nutritivo, fornecendo nutrientes essenciais como ferro, cálcio, magnésio e folato, além de ser rico em carotenoides, flavonoides e vitaminas A e C.
